1 cup quinoa
1 can chickpeas
1 cucumber & 1 tomato
1/4 cup red onion, cilantro & mint
2 tbsp olive oil + Juice of 1 lemon
1 tsp cumin, 1/2 tsp coriander, 1/4 tsp turmeric
Salt & pepper to taste
Instructions
- Cook quinoa and let it cool.
- Mix all veggies, chickpeas, and herbs.
- Whisk dressing ingredients together.
- Toss everything, serve fresh or chilled!
